Open since December 2004, it's easy to see why Mosaic is getting such rave reviews. Besides being awarded locally by the River Front Times and Sauce Magazine with the title of "Best New Restaurant and Best Fusion" 2005 and 2006, they are also getting national attention with such celebrities as Bill Murray and Dick Vital who dined at Mosaic during the NCAA Championship.

Chef and Founder of Mosaic Modern Fusion Restaurants, Claus Schmitz was born into a european restaurateur family and 3 decades of being passionate about the deep sensory objects of fine cuisine and guest service is evident when one experiences the modern simplicity of Mosaic Modern Fusion Restaurants. After graduating from the German Culinary Institute in Fulda, he earned a number of culinary award at a young age and pursued his craft in some of the best hotels and restaurants on 3 continents.

Nationally, Travel & Lesuire Magazine featured Mosaic in their June 2005 issue with Mosaic as one of the Downtown hotspots to be making a major difference in the city of St. Louis. Additional accolades have been received from the St. Louis Magazine "Best 10 Restaurants in St. Louis", October 2005 and St. Louis Home and Lifestyle as one of the "Best Restaurants" in St. Louis.

Now after 4 years, Mosaic Modern Fusion Restaurants is in growth mode and with Mosaic having redefined the dining scene in St. Louis, Chef Schmitz will bring his passion to more locations in the midwest and beyond.
